B Stock, uncleaned with rust or light water damage to wood. Can still be cleaned but expect possible pits or gaps in wood.

New Vintage hand forged carbon steel butcher’s abattre chopping chef knife, unused fresh from storage. These would have been used for chopping where a cleaver was too heavy but not on such tough work to require a saw. While these were certainly not high status knives in their day they have a beautiful taper throughout the tang and along the length of the blade along with a 1/2 S grind, a great example of old Thiers hand forging and grinding.
While it is hard to pin point the exact years these were made the hand forged blades with the steel and brass rosette rivets suggests 1950s manufacture.
