Vintage K Sabatier Jeune 14.25” monster chef knife made in the 1960’s in Thiers France. Blade is very full and free from abuse, it has a small waviness that most French knives of this time have, no large bends or damage. Handle is secure and tight although the wood has shrunk a bit and there are a few nicks.
These were hand forged after being drop forged and ground on water stones in the old style giving them a great geometry; nimble where they need to be and tough in the heel. These are the quintessential post war French chef knife and K Sabatier Jeune are sought after for good reason.
